To make fresh harvest available for as long as possible, we have selected different cultivars of blueberry and raspberry, which have excellent organoleptic qualities and staggered ripening periods from June/July to August, depending on the different characteristics and weather conditions.
To preserve and be able to enjoy fruit out of season, we have chosen to produce extra jam and nectar following methods approved by the EU. These allow us to keep the highest possible amount of fruit in the product, adding the smallest possible amount of natural products necessary for proper preservation over time.
At the base of our processed products are two typical "derivatives" of every harvest process of fresh fruit. Fruits with ripeness considered slightly advanced are immediately frozen to be used for processing, as well as the small surpluses of the harvest, if these remain unsold within the second day after harvesting. We then entrust these "derivatives" to a specialized artisanal laboratory for processing.

We use the term jam instead of marmalade, which is more traditional and commonly used, because the latter is appropriate only for preparations based on citrus fruits.

The term jam, on the other hand, is reserved for preparations containing all other fruits, even mixed together, possibly even with citrus fruits. Moreover, these rules have precisely defined the production specifications, distinguishing between jam and extra jam depending on the minimum required fruit content. For the latter, this must be at least 45g per 100g of finished product.
In our case, to produce 100g of extra jam with our organic fruits we need 103.2g of blueberries and 100.8g of raspberries. To these is added that minimum amount of organic beet sugar, necessary to ensure a reasonable shelf life after opening the package.
The partial weight loss during processing, which is due to the evaporation of the water contained in the fruit, allows the finished product to return to the reference value of 100g. We therefore use a quantity of fruit more than double the required minimum for extra jam.

Our nectar contains 45.1% of our organic blueberries and thus greatly exceeds the specifications regarding the minimum fruit content. The 9% organic beet sugar that is added represents the minimum necessary for proper preservation.
The nectar, in addition to being drunk as a healthy thirst-quencher directly from the bottle or diluted in water, can be added to natural yogurt or ice cream to enhance the flavor and thus get the most benefit from a pleasant restorative break.
