In order to make a fresh crop available for the longest period possible, we have selected several cultivars of American blueberry and raspberry, which have excellent organoleptic qualities and ripening periods scaled in time from June/July to August, depending on different characteristics and weather conditions.
In order to preserve and be able to consume fruit out of season, we have chosen to produce extra confettura and nectar following EU-approved methods. These make it possible to keep as much fruit as possible in the product while adding the least amount of natural products necessary for proper preservation over time.
The basis of our processed products are two “by-products” typical of any fresh fruit harvesting process. Fruits with ripening judged to be slightly advanced are immediately frozen for processing, as are small surpluses from the harvest if these remain unsold by the second day after picking. We then entrust these “by-products” to a specialized artisanal workshop for processing.

We use the term jam instead of marmalade, which is more traditional and commonly used, because the latter is appropriate only for citrus-based preparations:

The term jam, on the other hand, is reserved for preparations containing all other fruits, even mixed together, possibly including citrus fruits. In addition, these rules have precisely defined production specifications distinguishing between jam and extra jam according to the mandatory minimum fruit content. For the latter this must be at least 45g per 100g of finished product.
In our case to produce 100g of extra jam with our organic fruits we need 103.2g of blueberries and 100.8g of raspberries. To these we add the minimum amount of organic beet sugar necessary to ensure a reasonable shelf life after opening the package.
The partial weight loss during processing, which is due to the evaporation of the water contained in the fruit, allows the finished product to return to the 100g reference value. We therefore use more than double the amount of fruit than the mandatory minimum for extra jam.

Our nectar contains 45.1% of our organic blueberries and thus far exceeds specifications regarding minimum fruit content. The 9% organic beet sugar that is added to it represents the minimum necessary for proper preservation .
The nectar, in addition to being drunk as a healthy thirst quencher straight from the bottle or diluted in water, can be added to natural yoghurt or ice cream to enrich the flavor and thus derive maximum benefit from a pleasant restorative break.
